½ cup cooked garbanzo beans
Handful of chopped raw almonds
1 zucchini, sliced
1 cup mixed baby leaves
Olive oil for brushing
2 tablespoons tahini
Juice of ½ lemon
1 garlic clove
Pinch of salt and pepper
1-2 tablespoons of water

Brush zucchini slices with a little olive oil and lightly grill for 10-15 minutes at 350 degrees F (or 170 degrees C) in the oven.
For the dressing, throw the ingredients in to a blender or food processor. Gradually add water to achieve the level of creaminess you desire for your dressing.
Coat the garbanzo beans with the dressing and pour the mixture onto the salad.
This makes a great side salad to share at meals, or if you want to beef it up a little, add grilled salmon, or if you are vegetarian, top it with avocado — both of which are wonderful “skin foods”.
