Harvest Salad

If you’re looking for a light but tasty salad recipe for your thanksgiving meal, we’ve got one for you that will also help keep your skin glowing during the holidays.

Salad recipe:

1 roasted kaboucha pumpkin, cubed

4 cups of kale

Juice of half a lemon

Pinch of sea salt

½ red apple, diced

2 cups of cooked quinoa

2 cups of cherry tomatoes

1 cucumber, sliced

 

Dressing recipe:

2 small cloves of garlic

4 tablespoons of white wine vinegar

4 tablespoons of extra virgin olive oil

Pinch of black pepper

Pinch of sea salt

In a food processor, pulse the dressing ingredients a few times till the garlic is well minced. Massage the kale with lemon juice and salt until it wilts and becomes softer. Put all the salad ingredients in a large serving bowl, drizzle the dressing over everything, and toss well.
