The citrus dressing acts as the perfect foil to the salty haloumi cheese, while the peas and mint are a refreshing alternative to leafy greens.

Recipe (serves 2):
2 cups frozen peas
6 pieces haloumi cheese, cut into 1/2 –inch slices
1 cup fresh mint leaves
Juice of 1 lemon
2 tablespoons extra virgin olive oil
1 scoop Sparkle Collagen with Verisol®
Place frozen peas in a bowl and pour boiling water over just to flash-cook them for a minute. Strain the peas and then douse with cold water.
Heat a non-stick frying pan to medium and then cook the haloumi till both sides are golden brown. If you don’t have a non-stick pan, drizzle a little olive oil to prevent the haloumi from sticking.
Whisk the lemon juice, extra virgin olive oil, and Sparkle Collagen until smooth.
Lay the peas out on a plate and top with the haloumi and scatter mint leaves all over. Drizzle the dressing over the salad.
