Packed with protein and fiber, this beautifying white bean salad is a tasty side dish to any meal or picnic. Or you can toss it with some pasta to make it a more satisfying meal.

1 cup of canned white beans, drained
1 medium cucumber, chopped
1 cup of cherry tomatoes, chopped
¼ white onion, diced
Handful of fresh basil, finely sliced
1 scoop of Sparkle Collagen with Verisol®
1 tablespoon of white wine vinegar
Juice of half a lemon
1 tablespoon extra virgin olive oil
Salt and black pepper to taste
After you dice the onions, put them in a bowl of filtered water for a few minutes to take the edge off and then drain when you are ready to mix the salad.
For the dressing, stir the collagen peptide powder into the oil, lemon juice, vinegar until it has dissolved. Pour the dressing over the salad.
Tip: Make it a few hours ahead or the day before to let the beans absorb the dressing and it gets even more delicious.
